Inspired by the artistry of traditional Italian master bakers, we perfected our Double Leavening method. We let water, flour, and sourdough rest overnight, allowing deep flavors to develop. The next day, as the dough undergoes its second rise, we enrich it with ancient Tumminia wheat flour and extra virgin olive oil. The result? A pizza with unparalleled flavor, lightness, and digestibility.
